Friday night has finally arrived. Ahhh. Not that we’re doing anything special — just catching up on some work and relaxing. I must have slept all wrong on my neck last night because I’m doing that Frankenstein head turning thing and my neck and shoulders have hurt all day. Ugg. But I just might try a little (easy) yoga this evening and see how that goes because I really feel like doing something stretchy. One of these days I’m going to get around to something that actually involves movement, I swear.
Here’s what today’s food looked like:
Half an alligator pear …

A hard-boiled egg white (I didn’t mean to make the photos look so similar but … isn’t that cool?)

Veggies steamed in the rice cooker with cheddar and Monterrey Jack cheese cubes mixed in

With some of this sprinkled on top

And lookie what I found in the freezer — some chocolate-covered pretzels I almost forgot about.

There was also a big iced coffee and some more dates and almond butter just a little while ago (sadly I only have about five dates left and probably 1/3 of the almond butter I just bought three days ago). At dinnertime I just had some chicken that I cooked for Kevin’s salad.
Now off to wash dishes, possibly do some yoga, and definitely read.

I made something new for dinner tonight. And no, it didn’t involve vegetarian meat replacement products as the title might have you thinking. I had some sliced portobellos in the fridge and I liked the portobello burgers so much I thought I’d try a cheese steak sandwich using the mushrooms in place of steak instead of in addition to it.
The result? Tasty.

Mushrooms are so good. Especially when paired with melted smoked mozzarella. I had my sandwich open faced.
I just marinated the mushrooms in a good amount of Worchestershire sauce and about a teaspoon of olive oil and sprinkled salt and pepper on them. Then I sauteed them with some peppers and onions and topped it with smoked mozzarella cheese (so good!) then put it all on some toasted bread.

Served with a salad of romaine lettuce, spinach, radicchio, avocado, tomato, and bell pepper tossed in some olive oil, red wine vinegar, and a little salt.

That salsa (Jack’s Special medium-hot) went with some corn chips. It is the best salsa I’ve ever gotten from a store and tastes the most like restaurant salsa. Seriously, it’s so so good. We are addicted to it.
I also had some frozen yogurt and chocolate chips as well as a banana with peanut butter (not shown).
Another crazy day, still no workout. Tomorrow is Wednesday though so I am confident I can get some good activity in (probably some quality gym time). Until next time!
